Coffee is 98% water, so water is the ingredient you taste most and think about least. Any baker knows the same recipe with a different flour is a different loaf. Water works the same way in a cup. The minerals dissolved in it do the extracting, the way protein in flour does the structural work in dough: too little and the shot is thin and sour, too much and it is harsh and flat. Hardness, which is mostly calcium, is the other half of the story. It is what scales a kettle, and it scales a boiler and a group head the same way, except the boiler costs more and runs all day. Chlorine and chloramine in city water taste of themselves and eat the brass and rubber inside a machine.
A Vivreau cartridge takes hardness down to a set level, holds the minerals that extraction needs, and pulls the chlorine out. The result is a machine that tastes the same on Thursday as it did on Monday and does not spend its life fighting scale. The Why Water Matters page has the chemistry in full.
Cartridges and heads are in stock and ship. The C50 and C150 suit a single-group bar or an office brewer, the C300 a busy two-group, the C500 and C1100 a multi-group line or a kitchen. Filter heads, replacement cartridges and starter kits are all here. Cartridges are rated by liters, not by months, so tell us your equipment and roughly what you pour and we will work out the change interval. Reverse osmosis, high-flow and softening systems are sized to the site, so those are call-to-order.
